Firearm parts are restricted for international shipping and require permits. About the only thing that can be exported is "sporting" (non-military) rifle scopes.

The laws in Europe vary wildly and restriction abound. It might be easier to get parts from surplus sources in europe to europe.
Many countries in Europe only want sporting/hunting/target guns and thats it. Taget - 22 target only - guns stays in a target club armory. Hunting - you have to own a Forest and employ a forster to maintain it. Hunting - schedule a tripp to Africa and order a Afrika gun from Mauser.
Getting any European authority to sign of on any AKM variant may be real tuff. Although I love that fact you want one and you should learn all can. But if you can't import them in the full light of full disclosure to the local law enforcement, I would stay away.
Your local governt may not like the parts either. The collecting excuse will not work - usually - guns parts will be VERBOTEN. Collecting wine lables - Madona posters - bad Russian flims - cool. Collecting any thing that could conceiveable shoot bullets - NO - Niet - (french) NOah.
I would go bolt action. M44
WOrds to a actual song. "YES!!! - This plan can not fail - to get us both thrown into some GRIMM Paris jail - and off course our family and girls friends are wise enough not to post our bail."
If you are young enough - join your local army - have fun there. If not - do not get into trouble - get a job and emagrate to Arizona, USA.

Great. Maybe an AKM is not cool IN your area. I live in CA USA that can have a PC brain fart from time to time.
If we can be of any help even if it is in M44 bolt action - single shot shotgun or air soft, we will try to help. You being in Europe may have easier access to stuff we in the USA do not (manuals-european gunsmiths-european machinists & engineers).
Have fun - shoot straight.
If you can not shoot straight go FA. Where legal. :uhoh_smal
